I would be interested in hosting a Redmine install on the Amazon network. Since you are now doing 1 hour trials on different Jumpboxes, when could I get a version that I could host on the EC2 cloud on a continous basis?

This capability exists for subscribers at the Plus and Premium levels - we just haven't announced it on our site yet. If you'd like to host on EC2, purchase a non-Basic JumpBox Open subscription and then give us the number of your Amazon account (this is the 12-digit number under the logout link when you're logged into aws.amazon.com).
