Hello Brian,
Even though I have answered this same question for you, via email, I will answer it again here as well as provide the answer as a FAQ in our wiki. I consider it inevitable that we will eventually offer 64 bit versions of some, if not all of the JumpBoxes. I don't know when it will make sense for us to pursue this, however. So far, I am aware of only a handful of requests for 64bit images out of hundreds of EC2 users.
Which of the applications in the JumpBox Library do you think would benefit the most out of having a 64bit AMI and why?

Your tomcat appliance should be a good candidate, along with MySQL. Anything that could really benefit from having access to the extra RAM.
